What Fujian tastes like
Fujian cuisine (Min cai) is one of China's eight great culinary traditions, with three strong regional schools: Fuzhou cuisine (light soups, sweet-savory, red-cured items), Mindong cuisine (eastern Fujian - seafood and steamed dishes led by Ningde), and Minnan cuisine (Xiamen-Quanzhou-Zhangzhou - refined and seafood-led with iconic light bites). Provincial signatures include Buddha Jumps Over the Wall (Fuzhou showpiece), satay noodles, oyster omelette, sea-worm jelly (tusun dong), ginger duck, oyster bun, Xiapu seafood and abalone, Shaxian snacks (the most famous Chinese snack empire, originating in Sanming), the Hakka stuffed tofu of western Fujian, and Wuyi's cliff Da Hong Pao tea. The snack and street-food culture is unusually strong: Shaxian snack streets in Sanming, the old-town food alleys of Quanzhou's West Street, and Gulangyu's heritage food shops all give a snapshot of Min life.
