Jiangxi is a southeastern inland province wrapped around the lower Yangtze and Poyang Lake, China's largest freshwater lake. Travelers come for Mount Lu (the summer retreat UNESCO Cultural Landscape), Jingdezhen (the millennium-old porcelain capital), Wuyuan's Ming-era Huizhou villages, and the red-revolutionary corridor from Nanchang to Jinggangshan. The province is also one of China's greenest - over 64% forest cover - and the slow-travel corridor of Poyang Lake wetlands and Gannan Hakka rounds is increasingly popular with second-visit China travelers.

What Jiangxi tastes like

Jiangxi cuisine (Gan cai) is salty, fresh, and slightly spicy, building flavor from rice noodles, fresh chili, cured meats, river fish, and mountain bamboo shoots. Provincial signatures include stir-fried cured pork with artemisia (lihao chao larou), steamed pork with rice flour (fenzheng rou), Jinggangshan bamboo shoots smoked over rice hulls, Gannan small-fry fish, Lianhua blood duck, Poyang Lake silver fish, and the famous clay-jar soup (waguan tang). Street food lives around Nanchang's Shengjinta and Yangzixiang, Jingdezhen's Tao Xi Chuan night market, and Jiujiang's Xunyang Li 1723.
