Liaoning is China's northeastern coastal province, the historical Manchurian heartland and the economic core of the Northeast (Dongbei). The province runs from the Qing-dynasty imperial capitals of Shenyang, across the pine-forested Liaodong Peninsula to the Bohai-bay harbor of Dalian, and continues east to the Yalu River and North Korea border at Dandong. Travelers come for the Qing heritage of Shenyang, the Russian-leased-port and seaside-resort atmosphere of Dalian, the red-crowned-crane wetlands of Panjin, the Lushun Russo-Japanese war sites, and the maple forests of Benxi. Routes typically combine 2-3 of these in 4-7 days, with Shenyang and Dalian as the standard anchors.

What Liaoning tastes like

Liaoning cuisine combines the Dongbei (Northeastern) tradition with a strong seafood-led coastal school in Dalian and Dandong. Provincial signatures include Liaoning suan cai (Dongbei sauerkraut stewed with pork belly), the famous Dalian-style seafood hotpot (dalian haixian dun), Yingkou salt-baked fish, Dandong's cold noodles and Korean-style barbecue, Shenyang chicken-frame hotpot (jipai guo), the Liaoning-style pork knuckle stew, and a fresh seafood culture led by Dalian abalone, sea urchin, mantis shrimp, and yellow croaker. The street-food culture in Dalian and Shenyang is strong - Shenyang's Zhongjie food street and Dalian's Russian Street (Eluosi Jie) night markets are the most atmospheric local food spots.
