Sichuan - 21 Cities & Top Attractions

Sichuan is the deepest cultural and ecological province of western China, a basin rimmed by the Tibetan Plateau, the Qinling, and the Hengduan Mountains. The province is anchored by Chengdu - the UNESCO City of Gastronomy and home of the giant panda - and stretches west into the Tibetan Kham and Qiang highlands of Aba, Garze, and Liangshan. Travelers come for the UNESCO World Heritage sites of Jiuzhaigou and Huanglong, the Leshan Giant Buddha, the Emei Mountain, the Daocheng-Yading sacred peaks, the Daocheng Tibetan plateau, and the giant panda breeding base. Routes typically combine the Chengdu basin with one or two of the western highlands, with Aba (Jiuzhaigou-Huanglong) the most popular and Daocheng the most remote.

What Sichuan tastes like

Sichuan cuisine (Chuan cai) is one of China's eight great culinary traditions, anchored on the Chengdu basin and known for the 'seven flavors and eight spices' (七味八滋) - the most recognized being mala (numbing-spicy). Provincial signatures include mapo tofu, kung pao chicken, twice-cooked pork (hui guo rou), boiled fish (shui zhu yu), hotpot (huo guo), dan dan noodles, fuqi feipian (cold beef slices), and the legendary Chengdu small-dish (xiao chi) street-food culture. The western highlands (Aba, Garze, Liangshan) add the Tibetan and Qiang traditions: yak meat, butter tea, tsampa, yak yogurt, highland barley liquor, and the Qiang-style pickled vegetables. Northern Sichuan (around Guangyuan and Langzhong) keeps a more traditional Han-Chinese profile. The province pairs naturally with a strong tea and baijiu (Luzhou Laojiao, Wuliangye) culture.
