Jinan, the capital of Shandong Province, is the 'City of Springs' (Quancheng), home to 720 named natural springs - more than any other city in China. The Baotu Spring (the 'Number One Spring Under Heaven') has been gushing continuously since the Song dynasty. The 2,500-year-old provincial capital sits on the south bank of the Yellow River, with Daming Lake, Thousand Buddha Mountain, and Furong Street's old town in the historic core, and the Shandong Museum and Jinan's modern central business district to the east. The Shandong University campus occupies part of the old city. Jinan is the cradle of Lu cai (Shandong cuisine) - the Jinan school of Lu cai, known for fresh spring-water dishes, bazirou braised pork, nine-turn braised intestines, and the Caobao baozi (the 100-year-old steamed bun brand). The Confucian and Taoist heritage is concentrated in the southern mountains (Thousand Buddha Mountain) and the Jinan Confucian Temple.

Local Flavors

The signature Jinan Lu-cai dish - thick slices of pork belly braised in soy sauce, sugar, and eight-spice for 4 hours, served over rice. The Jinan bazirou is sweeter and more soy-forward than the Shanghai red-braised pork. Served at every Jinan Lu-cai restaurant, and the most-celebrated version is at the Jinan Confucian Mansion banquet.
Recommended: Caobao Baozi on Furong Street, or Yuxuan Lu-cai Restaurant (玉轩鲁菜馆) on Jingliu Road

The Jinan breakfast specialty - a millet porridge cooked with peanuts, soybeans, and sesame, sweetened with brown sugar, served in a clay pot. The texture is thick, with the nuts giving it a rich mouthfeel. Found at every Jinan morning market, particularly the Daming Lake area.
Recommended: Daming Lake South Gate morning market, or Furong Street breakfast stalls

The 100-year-old steamed-bun brand, founded 1920 by Zhang Xinhua, the most-celebrated Jinan snack. The pork-and-cabbage bun is the classic, but the pork-bamboo-shoot and the vegetable-and-egg varieties are equally famous. Served in bamboo steamers with a vinegar-garlic dip. The 30-minute queue is part of the experience.
Recommended: Caobao Baozi Flagship Store (草包包子铺总店) on Furong Street, Jinan

The Jinan Lu-cai classic - pork large intestine braised in soy sauce, sugar, vinegar, and nine spices (including Sichuan pepper, star anise, and fennel) for 3 hours. The technique is named for the 9 cooking steps. The result is a sweet-sour-spicy intestine with a glossy red sauce. The most-elevated Jinan Lu-cai dish, served at every Lu-cai restaurant.
Recommended: Jingshi Lu-cai Restaurant (聚丰德饭店) on Jingliu Road, or Yuxuan

The Jinan snack - a thin spiral-shaped fried dough, crispy outside and soft inside, served with a sprinkle of salt and pepper. The Jinan oil spiral is the most-photographed street snack, found at every Jinan breakfast market. The 100-year tradition started at the Jinan Confucian Temple district.
Recommended: Furong Street breakfast stalls, or the Jinan Confucian Temple market

The Jinan breakfast - soft tofu pudding made with the local spring water, served with soy sauce, pickled vegetables, and crispy fried dough sticks. The spring water gives the tofu a smoother texture than other cities. Served at every Jinan morning market, paired with the Jinan oil spirals.
Recommended: Daming Lake South Gate morning market, or Baotu Spring area breakfast stalls
Curated Itineraries

A 2-day first-time Jinan trip covering the Baotu Spring, Daming Lake, Thousand Buddha Mountain, Shandong Museum, and the Furong Street old town. Best April-October; spring for the cherry-blossom at Qianfo Mountain, autumn for the cool weather and the Daming Lake views.

A 3-day trip starting in Jinan (springs + Shandong Museum), continuing south to Qufu (Confucius Temple, Mansion, and Cemetery - UNESCO World Heritage). Best April-October; pairs the natural beauty of the City of Springs with the cultural depth of the Confucian birthplace.

A 3-day trip from Jinan to Mount Tai (1-hour high-speed rail) for the iconic UNESCO climb. Day 1: Jinan city (Baotu Spring + Daming Lake). Day 2-3: Mount Tai (climb + sunrise). Best April-October; the summer thunderstorm season is risky for the climb.
